Steamed scallops with black bean sauce

  Ingredients

  Serves 4

  • 12 fresh scallops roe removed off the shell
  • 2 tablespoons oil
  • 1/2 teaspoon finely chopped garlic
  • 1/2 teaspoon finely chopped fresh ginger
  • 1 tablespoon finely chopped spring onions
  • 1 teaspoon finely chopped fresh chillies
  • 1 tablespoon light soy sauce
  • 1 tablespoon chinese rice wine
  • 2 tablespoons black bean sauce
  • 2 tablespoons stock
  • few drops of sesame oil

  Method

Place the scallops in a large dish in the hot steamer and steam for 8-9 minutes over a hot heat. heat the oil in a wok, add the garlic, ginger, spring onion and chilli and stir fry for 30 seconds, add the rest of the ingredients, and stir well. bring to the boil and simmer for 1 minute. Pour 2 teaspoons of the sauce over each scallop and serve.
