Steamed pork spare ribs with black bean sauce

  Ingredients

  Serves 4

  • 1lb (450g) pork spare ribs
  • 2 spring onions to garnish
  • For the marinade
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon finely chopped root ginger
  • 1 teaspoon finely chopped fresh chillies
  • 2 tablespoon black bean sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon chinese rice wine
  • 2 teaspoons cornflour

  Method

chop the spare ribs into small bite size pieces and marinate in the marinade for 24 hours. spread the ribs out on a dish and steam in a hot steamer for 30 mintes. Serve hot garnished with shreds of spring onion.
