Spicy salt and pepper spare ribs

  Ingredients

  Serves 4

  • 12 Spare Pork ribs
  • 1-2 Fresh chillies
  • oil for deep frying
  • 1 teaspoon spicy salt and pepper
  • for the marinade:
  • 1/2 teaspoon finely chopped garlic
  • 1 tablespoon caster sugar
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons wine vinegar
  • 1/2 teaspoon chilli sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornflour

  Method

Trim off any excess fat or gristle from the ribs, marinate in the marinade for 24 hours. Deep-fry the ribs in moderate oil (120 degrees) for 1 hour then heat the oil to 190 degress and cook for 2 minutes. Remove and drain. Sprinkle over the spicy salt and pepper and a few thin slices of fresh chilli and serve.
