| Puree the prawns and the lard until it forms a smooth paste. Mix with the salt, pepper, egg white, spring onions, ginger , wine, and cornflour paste. Spread the sesame seed out on a plate. Spread the prawn paste thickly on each slice of bread. Dip the prawn coated side into the sesame seeds to coat the mixture. Heat the oil in a frying pan and shallow fry the toast spread side down, 2 slices at a time until they start to turn golden brown. remove and drain on kitchen paper. Trim off the crusts and cut each slice into 6-8 squares and serve hot. |
