Sesame Prawn Toasts

  Ingredients

  Serves 6-8 as a starter

  • 8 oz (225g) raw prawns, shelled
  • 1 oz (25g) Beef Lard
  • salt and pepper to taste
  • 1 egg white
  • 1 teaspoon finely chopped spring onions
  • 1 teaspoon finely chopped fresh ginger root
  • 1 tablespoon thick cornflour paste
  • 5 oz (115-140g) white sesame seeds
  • 6 large slices white bread
  • oil for deep frying

  Method

Puree the prawns and the lard until it forms a smooth paste. Mix with the salt, pepper, egg white, spring onions, ginger , wine, and cornflour paste. Spread the sesame seed out on a plate. Spread the prawn paste thickly on each slice of bread. Dip the prawn coated side into the sesame seeds to coat the mixture. Heat the oil in a frying pan and shallow fry the toast spread side down, 2 slices at a time until they start to turn golden brown. remove and drain on kitchen paper. Trim off the crusts and cut each slice into 6-8 squares and serve hot.
