  • 500ml Groundnut Oil
  • 1 Bulb garlic - cloves crushed
  • 1 piece root ginger - crushed
  • 4 Whole Star Anise
  • 4 Green Caradamom Pods
  • 2 Dried Chillies
  • 6 Cloves
  • 2 Sticks Cinnamon
  • 2 Bay leaves
  • 6 Black Peppercorns
  • 1 Black Caradmom pod

  Method

You can vary the above spices depending on availability, garlic and ginger are pretty essential however. Place the spices in a sauce pan and pour over the oil. Simmer on a gentle heat so that the spices do not burn for 1 hour. Strain, leave to cool and bottle the oil for use when needed. Store in the refigerator.
