Ribs in black bean sauce.

  Ingredients

  Serves 10-12 as starter or 6-8 as main course

  • 2 1/2lb (1.1kg) pork Spare ribs
  • 2-3 cloves garlic, crushed
  • 1 tablespoon crushed fresh ginger
  • 200ml Black bean sauce
  • 1 tablespoon soft brown sugar

  Method

Trim off and discard any excess fat and gristle from the ribs. Mix all the ingredients to make a marinade and marinate the ribs in the marinade for 24 hours. Cook in a hot oven for 45 minutes turning and basting once or twice.
