  Serves To be used in many recipes

  • 1 Kg (2lbs) Prawn heads and shells.
  • Water

  Method

Place the prawn heads and shells in a large pot and cover with just enough water. Bring to the boil and boil for 1 hour, strain and cool. Will keep in a fridge for 2-3 days or freeze for up to 1 month.
