| Ready made prawn crackers are widely available through supermarkets and make a great accompaniment. Heat the oil in a Wok or depp-fryer to hot (180/350) and fry 6-8 prawn crackers at a time. They puff up in a matter of seconds and when they are fully expanded they should become a brilliant white colour and about 4 times larger.Remove immediately with a strainer, shake off the excess oil and drain on kitchen paper. |
