King Prawn Chow Mein

  Ingredients

  Serves 4

  • 1 1b (450g) Fresh or 9oz (250g) of dried Egg Noodles
  • 4-5 tablespoons seasoned oil
  • 8 oz (225g) Raw tiger prawns
  • 4 oz (115g) French Beans
  • 4 oz (115g) fresh Bean sprouts
  • 1 teaspoon salt
  • 1 teaspoon soft brown suger
  • 1 tablespoon chinese rice wine
  • 2 tablespoons light soy sauce
  • 2 spring onions lightly shredded
  • stock or water
  • sesame oil

  Method

Cook the noodles in salted boiling water according to the insructions on the packet, then drain and rinse under cold water. Top and tail the beans. Peel the prawns and save the heads and shells for prawn stock. Heat 3 tablespoons of oil in a wok until hot, stir fry the vegetables and prawns until the prawns turn pink, add the sugar, salt , wine, half the soy sauce and half the spring onions, mix well and add a little prawn stock (or water) if necessary to prevent sticking. Remove and keep warm as the noodle dressing. Heat the remaining oil and stir fry the noodles for 3 minutes add the remaining soy sauce and stir well. remove to a large serving dish and pour over the dressing, garnish with the sesame oil and the rest of the spring onions. Serve hot.
