Hot and sour Sauce

  Ingredients

  Serves For use in Hot and Sour sauce dishes

  • 1 pint stock
  • 1 tablespoon rice wine
  • 6 tablespoons wine or cider vinegar
  • 2 tablespoons light soy sauce
  • 1 teaspoon chilli powder
  • 1-2 tablespoon2 thick cornflour paste
  • salt and pepper
  • 1 teaspoon MSG
  • 2 tablespoons seasoned oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 tablespoon tomato puree

  Method

Heat the oil in a hot wok. Add all the ingredients except stock and salt and pepper and stir fry until piping hot. Add the stock and bring to the boil, reduce to a simmer and simmer for 5 minutes then season to taste. Now thicken by adding the cornflour paste a little at a time. recheck and adjust seasoning if needed.
