Hot Smoked Fish

  Ingredients

  Serves 4 as main course or 8-10 as a starter

  • 1 lb (450g) firm white fish fillets( cod or haddock are best)
  • 1/2 pint (280 ml) stock
  • oil for deep frying
  • fot the marinade:
  • 1 tablespoons light soy sauce
  • 2 tablespoon dark soy sauce
  • 3 tablespoons chinese rice wine
  • 2 tablespoons soft brown sugar
  • 2 teaspoons five spice powder
  • 2 spring onions finely chopped
  • 1 tablespoon finely chopped fresh root ginger

  Method

Pat the fish dry with kitchen towel. Mix the marinade ingredients and marinate the fish for at least 1 hour. Bring the stock to the boil, add the fish and simmer for 10 minutes. Remove the fish and drain. Reserve the sauce. Deep fry the fish in very hot oil (190/375) for 2-3 minutes until golden and crisp. Remove and cover with a few spoons of the sauce. Serve hot on a bed of lettuce.
