Butterfly prawns

  Ingredients

  Serves 4

  • 24 Prawns - shell on raw
  • 3oz golden breadcrumbs
  • 2 beaten eggs

  Method

Remove the head and shell from the prawns but leave the tail shell on. Cut the prawn in half lengthways and flatten down. Dip each prawn in the egg then the breadcrumbs until well coated. Deep fry in hot oil (190 degrees) for 2-3 minutes until golden. Drain on kitchen towel and serve with a sweet chilli dipping sauce.
