Barbequed Spare Ribs

  Ingredients

  Serves 10-12 as starter or 6 as main course

  • 2 1/2lb (1.1kg) pork Spare ribs
  • For the marinade:
  • 3 cloves garlic, crushed
  • 1 tablespoon crushed fresh ginger
  • 1 teaspoon five spice powder
  • 1 tablespoon soft brown sugar
  • 3 tablespoons dark spirit preferably rum
  • 5 tablespoons light or dark soy sauce

  Method

Trim off and discard any excess fat and gristle from the ribs. Mix the marinade ingredients well and marinate the ribs in it for 24 hours refrigerate. Cook in a hot oven for 45 minutes turning and basting once or twice.
