Hot and sour Soup

  Ingredients

  Serves 4-6 people

  • 12 Straw mushrooms sliced
  • 4oz (100g) pork - shredded
  • 2oz (50g) sliced bamboo shoots
  • 2 pints stock
  • 1 tablespoon rice wine
  • 2 tablespoons light soy sauce
  • 1 teaspoon chilli powder
  • 1 egg, beaten
  • 1 tablespoon thick cornflour paste
  • 1 teaspoon salt
  • 1 teaspoon MSG
  • 2 tablespoons seasoned oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste

  Method

Heat the oil in a hot wok and. Add all the ingredients except stock and salt and pepper and stir fry until piping hot. Add the stock and bring to the boil, reduce to a simmer and simmer for 5 minutes then season to taste and serve. Optionally add a few small birds eye chillies when stir frying for extra heat.
