Chinese gravy

  Ingredients

  Serves 4 people

  • Shin of Beef or cheap beef cut on bone
  • 2-3 spring onions, each tied in a knot and bruised
  • 3-4 pieces root ginger, unpeeled, bruised
  • 3-4 tablespoons chinese spirit or brandy
  • 2 1/2 pints (1.5 litres) water
  • 1 teaspoon salt
  • 4 tablespoons light soy sauce
  • 3 tablespoons dark soy sauce
  • 1 tablespoon five spice powder
  • 4oz (125g) brown sugar

  Method

Cut the beef into 2-3 long strips, place them with the spring onions, ginger , brandy and water in a pot, bring to the boil and skim off the scum; simmer very gently under a lid for 20-25 minutes. Add the salt, soy saucs, spice and sugar and return to the boil, then simmer, covered again for 2 hourse. Strain the liquid and refrigerate when cold.
