Beef Soup

  Ingredients

  Serves 4

  • 4 oz (100g) beef steak
  • 2 teaspoons light soy sauce
  • 1 teaspoon soft brown sugar
  • 1 tablespoon rice wine
  • 1-2 tablespoons thick cornflour paste
  • 1 tablespoon sesame oil
  • 1 pint (600ml) stock or water
  • 1 whole beaten egg
  • salt and pepper to taste
  • 1 teaspoon MSG
  • finely chopped spring onions to garnish

  Method

Cut the steak into small thin strips. Make a marinade of the soy sauce, sugar, wine, aand 1 teaspoon corn flour paste plus the sesame oil and leave overnight refrigerated. Bring the stock or water to the boil, slowly add the beaten egg, stirring well. Add the steak, and stir well. Reduce to a simmer and cook until the steak is cooked through. Thicken the soup with the remaining cornflour paste. Add the MSG if using it and add salt and pepper to taste and serve with garnish.
